Recipe Directions

1. Mix coconut butter/oil with honey in a shallow dish. If coconut butter is liquid, they will separate, so chill in fridge to get mixable consistency if necessary.

2. Scrape out vanilla bean. Add to mixture, mixing well.

3. Sprinkle macadamias and blueberries on top and press down until all blueberries and macadamias are in the coconut mixture.

4. Pop the whole thing in the freezer until hardened. You should be able to break off pieces using a butter knife, but you can put these into ice cube trays for the perfect portion size. Store in freezer.
