Ingredients
MARINADE
1 tablespoon olive oil
½ tablespoon agave syrup
1 teaspoon paprika
¼ teaspoon cumin
¼ teaspoon cayenne
½ tablespoon lime juice
½ teaspoon salt
VEGETABLES
¼ onion (sliced)
1 clove of garlic (crushed)
1 carrot (grated or julienned)
½ summer squash (thinly sliced)
½ red pepper (sliced)
8 button mushrooms (quartered)
Recipe Directions
1. Mix all the marinade ingredients together. You can increase the cayenne and garlic content if you like things spicier!
2. Toss the vegetables into it and make sure they’re well coated. You can easily vary the vegetables you use.
3. Cover and leave to sit for at least 4 hours. During this time the veg, especially the mushrooms, will change their texture and become softer.
4. If you like, you can then put them in a dehydrator for an hour or so to warm through or into an oven on its coolest setting for 10 minutes.

I wish I had seen this earlier! I came up with a similar recipe with eggplant recently that was great. I dehydrated it for a long time though. Mine had some honey because the agave seems to get bitter with time. Once you have really good marinated vegies the cooked ones just taste gross!

Made this again but this time I added two cloves chopped garlic, a thumb size minced ginger and cilantro in the marinade. Best yet. Later I added some chipotle seasoning. yummy.

We love this. I just doubled this and added broccoli. I did go a bit lighter on the agave and added a little extra olive oil (only to make the maranade a bit thinner to spread out on the extra veggies).

Hmm, or at least I would have done, but for some reason I can't edit the recipe. Oh, well.
We now make this with just 1/2 Tbs olive oil and 1/2 Tbs agave, for the two of us.

I've been playing around with this some more, & I've now reduced both the oil and agave by half. But, obviously, feel free to play around with the dressing yourselves, & do it to your own tastes.

I'm beginning to think you're all right about the agave! I've just cut the amount in the recipe in half. :)

Vegan fajitas are one of my favorite things to cook and this recipe tastes just like them! Since going raw I find raw onions to be too strong but they are great even by themselves in this marinade. Thank you!

I am not going to forget this recipe! Delicious and really easy to make. I put mine in big collard greens but I really just wanted to eat the mixture by itself. I added guacamole and it really made for a filling healthy meal. Thanks for hooking me up !

This recipe tastes even better than real Fajitas! I used blended walnuts instead of mushrooms to form chunks, which look and taste kind of like meat.

I made this without the summer squash and the mushrooms. I used walnuts instead. It looks and smells IDENTICAL to meat fajitas. It also tastes really good. Thanks

Just had them wrapped in romaine leaves for lunch, one of my beginning forays into raw eating...Delicious! I think I can do this with all these great recipes!

awesome! just finished eating this great dish... with some minor alterations that is. I didn't have four hours lo let it sit and marinade, but the 45minutes it did sit for seemed to have been good enough! I didn't have any kind of tortillas or fajitas, but it was certainly tasty right on top of a bedding of lettuce and spinach. I also didn't have any carrots, so I grated some yummy pink daikons instead. Oh yeah, and I had just ran out of agave, but maple syrup seemed to do the trick just fine. I'll try it again with the suggested ingredients and see what I like best. Thanks!!

I can see why your partner would prefer them. I made this last night and doubled
the recipe. We had them in lettuce rolls with guacamole. Huge hit at our house.
We are using this again tonight as a fajita salad.
