1 cup coconut water
½ cup agave nectar
¼ cup cacao nibs
¼ teaspoon sea salt
1. With a coffee grinder, ground cacao nibs into powder. You should have about 1/2 cup cacao powder.
2. Liquefy all ingredients in a blender.
3. Pour mixture into 4 ounce popsicle molds. Leave about ½-inch space at the top to allow for expansion.
4. Put in the freezer for 6 hours. Overnight is best.

I would love to make these, but (at the risk of sounding innocently ignorant), what is coconut meat exactly?

No way! This recipe was SO UNBELIEVABLY delicious!! I am speechless... Thank you so much for posting it! I froze mine in ice cube trays with plastic wrap over the top to hold in tooth picks I used for the sticks. It worked great. Thanks again! And yes, your daughter is beautiful! Very cute picture!

The flesh from a young coconut, after you drink all the water, you can scrap it out with a spoon, should be easy, some older ones you have to apply some pressure.
I love to put the water and cocomeat into a blender with 1 packet of stevia and alittle nutmeg and have it for breakfast.

These sound fantastic! I'll be picking up so I can make these. I've been looking for a recipe for raw fudgesicles and I'm not great at coming up with raw recipes on my own, so thanks for sharing it! Your daughter is beautiful, by the way. :)
