Ingredients
MUSHROOM MIXTURE
1 cup water
1/2 cup sunflower seeds
¼ cup white button mushrooms (finely chopped)
2 tablespoons nutritional yeast (optional)
1/2 teaspoon garlic
1/2 teaspoon salt
Dash of black pepper
OTHER INGREDIENTS
2 handfuls of fresh green beans
1/4 cup red onion (thinly sliced)
1/2 cup mushrooms (chopped)
2 pieces of your favorite onion bread (sliced into thin strips and dehydrated until crisp)
Recipe Directions
1. I bought very fresh thin green beans and then cut them into small strips (French cut). You can dehydrate them a bit to soften them if you wish. Or, according to the comment below, you can freeze them.
2. Make the mushroom soup by blending until smooth.
3. Mix green beans, onion, mushrooms, and soup.
4. Top with the strips of onion bread. It can be warmed in the dehydrator if desired.

I used this raw vegan mushroom soup recipe as the base, but I reduced the water by half.

To soften fresh green beans, slice them into small strips and freeze them for at least 24 hours. Thaw them for several hours. At this point, the texture will resemble cooked green beans.

RAndommara, when I made it, I did mix some strips in and they did get soggy like the SAD version. I just wasn't sure it would appeal to everyone, so I left it out of the posted recipe.
I hope you all make this and love it like I do!

Want this now!!! Green bean casserole was always my favorite part of holiday meals. I cant wait to try this. I might mix a little onion strips in so they get soggy like the sad one.

You could buy some onion flavored flax crackers and crumble them up, that would be a good substitute.

Seriously, though, this is gonna be good. I'm not sure what I am going to replace the onion bread crunchy strips with. I don't have dehydrator yet

I love the soup! I took it camping last weekend, and everyone there loved it. Some of the tasters were vegetarian, some SAD, some really really SAD! And they all loved it.
