Bronwyn's Thoughts
By bronwynThis tastes just like a classic cream of mushroom soup. Thick, creamy and delicious.
The real version of this soup used to be my favorite when I was young.
When I created this for the first time today, I made the mistake of blending the mushrooms for a while with the soup and the flavor was much more pungent and the color of the soup was grey, as you can see from the photo.
It was still good but I know it would have been better to add them in at the last minute. You will want it to be a nice creamy off-white color.
I just made this on a whim so the measurements are from memory and may not be accurate.
Taste the soup as you’re making it to be sure the measurements are to your liking. I hope you enjoy.

Classic Cream of Mushroom Soup
I made this for dinner. It was great! I altered it a little to suit my taste, and I thought to more accurately resemble the canned mushroom soup I grew up on, I jacked up the salt.
1 1/2 cup water
½ cup Sunflower Seeds
¼ cup White Button Mushrooms, chopped fine
1/4 teaspoon Nutritional Yeast
1 small garlic clove
1 Tablespoon Salt
dash Black Pepper
Blended those; added 1/4 cup chopped mushrooms on top. Dehydrating them for a few hours would be great!
Thanks!

Thanks everyone for the lovely compliments! This has now become one of my staple raw meals.
Minimality, yeast extract is not raw and neither is nutritional yeast-that is why I listed it as an optional ingredient. As far as I know, no yeast is raw.

I don't have any sunflower seeds, but I have all the other ingredients. right now in my pantry, i have walnuts, peanuts, pistachios, and pumpkin seeds. do you think i could use one of those as a replacement? i am set on making this in the morning.

Is nutritional yeast the same with the yeast extract?
If not, is yeast extract raw?

This soup was simple and delicious! I dehydrated the mushrooms a bit before I added them to the soup. It gave them a great texture. I dried them while I heated the soup in the dehydrator, it worked really well. I like it so much that I made it last night, am going to make it again tonight and will make some to take camping this weekend!!!

This is fantastic. Tastes just like cream of mushroom soup! Left it in my Vita-mix for a couple of minutes to warm it up - definately a favourite.
