1 cup walnuts (chop in food processor)
5 sun-dried tomatoes (soak for 30-60 minutes)
½ teaspoon curry powder
½ teaspoon cumin powder
½ carrot (scrub and chop)
Salt to taste (This will vary depending on how salty your sun-dried tomatoes are)
1. Put all ingredients in the food processor (I use a 3 cup food processor for this. Mine is a Cuisinart Mini Prep Plus. I like this one because it has forward and reverse.) Process until it holds together.
2. Serve in desired manner.
This is a very delicious pate that is quick and easy to make.
It’s very filling and satisfying and can be used lots of different ways.
Suggestions: on a bed of grated veggies or greens with chopped tomatoes on top; as a dip with raw chips, crackers, or veggie slices; or as a sandwich on dehydrated bread or rolled up in a collard leaf.
You can also add about 1/4 cup red bell pepper, a little chipotle, a few cherry tomatoes or some fresh herbs.
