Ingredients
3 cup Kale, de-stem and finely chopped
1 Avocados
1 tablespoon Olive Oil
1 teaspoon Sea Salt
8 Grape Tomatoes, halved or quartered
2 Green Onions, white and green parts
1 tablespoon Lemon Juice, about half a lemon
Recipe Directions
De-stem and chop (or shred with your hands) the kale. Place the kale in a large bowl and drizzle the olive oil and sea salt over it. With your hands- massage the kale (this will make it easier to chew and digest.) Massage until the kale appears wilted or about 2 minutes.
Cut and stone the avocado. You can chop it up or just squeeze the flesh out of the skin into the bowl with the kale. Massage the avocado into the kale. I like to keep it a little chunky.
Chop the grape tomatoes and green onion. Add to the kale/avo mixture and stir (or just use your hands.)
Squeeze the lemon juice on top, mix and enjoy!

Electricity-free! This was one of my first raw dishes I made and I loved it! I make it all time. Depending on what you have, you can tweak this recipe and do what ever you like with it! This is just a suggestion.

I made this for dinner; it is just wonderful! Thanks for sharing the recipe; it will be one of my standards for now on.

Kale and Avocado Salad
i really like adding some sweetness to this, like dried cranberries (don't know if those are raw or not), raisins, or anything else similar, as well as pumpkin seeds. Really makes it tasty, although i'd probably skip the tomatoes if using the dried fruit.

I love kale salad! I massage in my avocado and tomatoes and give it good thoughts as I go. I cant believe how much it shrinks by! I think Ill have Kale salad for tea again tomorrow. I like to add in chopped up olives if I have some. Amazing how something so ordinary becomes so delicious after massage!

mmm, this is one of my favorites! i too, put olives in my kale salad...i use raw kalamata olives. :D

Kale-anything is def. a staple for me. I put it in smoothies and salads. The massaging helps wilt it quiet a bit-its just like cooking it with your hands! (but not really lol)
Thanks Fee. I'm going to try the olives next time I make it. What kind of olives do you use for this recipe?

How funny! I coincidentally made this today too! I add cayenne (ala Karen Knowler) and some pumpkin seeds. It's so yummy. Everyone needs to try this recipe. It works with all types of kale (frilly and dino). Thanks Kaseylj
