I have recently fallen in love with ripe plantain. My store carries them from California, so they are a more local choice than bananas and far sweeter! I love the texture of this smoothie, light and creamy, and the sweetness of the plantain hides the bite of collards or kale.

I've never tried one. How do you know when they're ripe?
