Ingredients
CRUST
1 cup mixed almonds, cashews, and Brazil nuts
1/2 cup dates
1/4 cup coconut butter
4 tablespoons water
Pinch of sea salt
FILLING
Meat of 1 young coconut
Juice of 3 limes
Zest of 1 lime
1/2 cup cashews (soaked)
1/2 cup coconut butter
1/2 teaspoon vanilla extract
4 tablespoons coconut water
2 packets of stevia (or to taste)
Recipe Directions
CRUST
1. Process nuts, dates, and salt.
2. Then mix in coconut butter and water.
3. Press into a springform pan and set in freezer while making pie filling.
FILLING
4. Blend all ingredients until very smooth.
5. Pour over top of crust.
6. Garnish with lime wedges and shredded coconut.
7. Set in fridge.

Coconut butter (also known as coconut oil) can be found at any health food store next to all the other oils. I have even found it at select regular grocery stores as well. Just look for cold-pressed, raw, extra virgin coconut oil.

Coconut butter is different than coconut oil. Coconut butter has coconut meat still in it like apple butter and it is not totally liquid at room temperature. It is white and creamy.
Coconut oil is just oil, no meat, and completely clear at room temp.
coconut butter is with all the nut butters and apple butters in my health food store. Coconut oil is with all the oils.
They are different textures so I require each one at different times. I add coconut butter to my chocolate coatings and spirulina balls for a firmer texture. The coconut oil just melts into liquid too fast at room temp.

The naming often depends on the company. Many folks use the terms "coconut butter" and "coconut oil" interchangeably. Some companies call creamed whole coconut "coconut butter" while others call it "coconut cream". It really can be confusing.
Given that ailema5 posted this particular recipe, and has identified coconut butter as "also known as coconut oil", I think it's a safe bet that this particular recipe calls for the oil, and not the creamed whole coconut.

This looks so good. I want to make it for my dad for father's day! Key lime pie is his favorite, but I'm trying to get him to be a little more healthy! I'll let you know how it goes! Thanks for posting!
