Recipe Directions

1. Put all ingredients in a food processor, and break down to a thick paste.

2. Shape into sausages about 1 x 3 inches by rolling between your hands.

3. Dehydrate for 4 hours. I put the dehydrator on 105 Fahrenheit, as Kate Wood doesn’t state a temperature anywhere in the book. I dehydrated mine for 5 hours.

This recipe is from Kate Wood: Eat Smart Eat Raw. I adapted it a little.

It originally calls for sunflower seeds, but I like pumpkin better.

It also calls for ground flax seed, but I couldn’t grind mine, so I used milled flax seed. Is that the same thing?

Anyway, it’s not as chewy as a real sausage, of course, but it tasted okay. I think I put too much onion.

Next time, I will add more “sausage” spices to add to the flavor. They still need something.

I used to make a burger with fennel seeds in it. The fennel seeds make your mouth feel like it has meat in it, hard to describe bt it really works. We just used dried fennel seeds that you get at the supermarket.

This turned out on the bland side, in my case. Though it did make for a reasonable substitution for falafel in my salad.

suggesting a new name that is more vegan.. Pumpkin Turds! they really remind me of "my creation" the other day.

ok don't take me seriously.. some sausages do look like that. only problem is that it looks like most of the "sausage flavor" comes from the tamari and yeast which i do not use.

i suggest putting other fermented flavors that are raw - you can use vinegar or sauerkraut water or raw yogurt and then balance the flavors with sweet and salty.. like dates and salt.

i also suggest next photo of raw sausages to have raw ketchup swirl and raw mustard swirl on it for an extra realistic touch.

Hi This would be so great if it worked out because I need to make something my boyfriend would eat- like meat. I tried to make something like sausage a while back but he didn't like it but then he knew it wasn't sausage if he'd had it at a restaurant he probably would have eaten it. I'd say add some mushrooms. How should one add the fennel? Half a cup of root? I've never used it so I'm not sure how. I like the idea of pumpkin seeds though because they are high in iron.

We made a sausage and we used fennel. The fennel added a sausage taste. You can use fennel seed or whole fennel which looks like a short round cellery stalk.
