1½ carrots (roughly chopped)
¾ cup cabbage (roughly chopped)
½ cup pumpkin seeds (ground)
2 tablespoon milled flax seeds
2 tablespoons nutritional yeast flakes
1 tablespoon tamari
1. Put all ingredients in a food processor, and break down to a thick paste.
2. Shape into sausages about 1 x 3 inches by rolling between your hands.
3. Dehydrate for 4 hours. I put the dehydrator on 105 Fahrenheit, as Kate Wood doesn’t state a temperature anywhere in the book. I dehydrated mine for 5 hours.

This recipe is from Kate Wood: Eat Smart Eat Raw. I adapted it a little.
It originally calls for sunflower seeds, but I like pumpkin better.
It also calls for ground flax seed, but I couldn’t grind mine, so I used milled flax seed. Is that the same thing?
Anyway, it’s not as chewy as a real sausage, of course, but it tasted okay. I think I put too much onion.
Next time, I will add more “sausage” spices to add to the flavor. They still need something.
