It fed only half of my appetite! But as a side or dessert for most other people, it would go much farther.
Ingredients
1 cup blueberries (fresh)
½ cup raw cashews or hemp seeds, or 3/4 cup young coconut meat
Juice from 1 lemon
¼ cup raw agave or 3 tablespoons raw honey
1 banana (frozen)
Recipe Directions
1. Put all ingredients, except banana, into a Vitamix and blend until creamy.
2. Add the banana and blend again until smooth.
3. Pour into a dish and let it set (if you can wait that long) for 30 minutes in the refrigerator. Eat. Enjoy your life!

The lemon makes this so wonderfully yummy! The blueberries make it set up, or you can eat it immediately and it will be more like a pudding.

I tried another variation of this mousse tonight, raspberries instead of blueberries. The blueberry one is better. :)

Oooh okay! Haha that's hilarious! You got me goin' here. For him maybe you could leave out the lemon and add strawberries?

hello!...i just saw your post as i was checking to make sure i remembered the recipe:)...the tart crust was 1 cup dried coconut,1/2 cup macadamia nuts,1T coconut oil,a squirt of agave,zest of 1 lemon,pulse in f.p.,press in pan ,chill while making filling....:blend 1 cup berries,1/2 cup macadamia nuts,1Tagave,juice and zest of 1 lemon,( i strained it ,but you don't have to),pour in crust,top w/more berries:)

hi,angie...thanks for posting this,its simply awesome!i love lemon, so i added the zest too.i used a variation today in a blueberry tart with a lemon coconut crust. i was thinking it would also be great frozen.

Shhhh! I ate it all before he got home from his friend's house :P He isn't a fan of sour stuff, & I like this one kinda tart, but maybe I'll tone it down for him... :)

Mmmm yummy. I'm sure Superman went wild over this one! Blueberry and lemon is an interesting combo.
