This is a quick easy dish to make for lunches or dinner. I put this on a bed of arugula with chopped tomato, avocado, and a dressing made of extra virgin olive oil, lime, and cilantro. You can also roll it in lettuce leaves and add homemade sour cream if you wanna get fancy. :)

1½ cups walnuts
1½ teaspoons cumin
3 teaspoons coriander
2 tablespoons nama shoyu
Recipe Directions
1. Grind the walnuts to a “ground meat” consistency.
2. Put in bowl, add spices and Nama Shoyu, and mix thoroughly.

This was awesome! It is really so incredibly easy to make. I added some corn scraped off of the cob, as well as some diced Serrano chili peppers. Yum yum!!!

I have to comment again and agree with LadyDove. This is one of a very few recipes that are keeping me raw. I love Mexican food and when I crave it, this works! When I make it I did on romaine and like the picture, I added chunks of tomato and avacado. I want to experiment with it a bit more as far as toppings. This is by far my #1 raw recipe so far!

This is one of 2 recipes keeping me all raw. I crave taco salad constantly! I like to throw my "tacos" on a bed of romaine, add in some scallions and red peppers. For dressing I just simply squeeze a juice of one lemon with a little bit of olive oil. It's delicious. Smells like tacos and tastes like tacos. That's all I needed to be hooked! :) I bet it would taste just as great rolled up in a romaine leaf with sliced tomatoes and some form of raw hot sauce.

I was a bit skeptical as I am new to raw foods like this but we threw it together and my non raw Mom tried it and said "This tastes just like beef!". Now we are vegan and it does remind me of the veggie ground round we use to make with taco seasoning except the texture is crunchy. I LOVED THIS and after I was done, I wanted more!
