Recipe Directions

1. Peel and chop carrots and sweet potato and add to your food processor along with the pine nuts, salt, cinnamon, cardamom, and nutmeg.

2. Pulse until you get a “couscous” consistency.

3. Place in a bowl and add raisins and chopped apricots. Give a taste and see if your prefer more salt or spice and enjoy!

I made this twice this week - super delicious and one of the few raw sweet potato recipes I've liked! Thanks! I, too, used dates instead of apricots once - still excellent. Tonight I substituted walnuts since I'm out of pine nuts: still pretty tasty, but it does change the texture a little. Make this while sweet potatoes are in season and use the freshest one you can find!!

WOW! Just made it but instead of apricots I used dates. Also -- not enough cardamon so I didn't use it. This recipe is really amazing and I am enjoying it right now.
