Ingredients
¼ cup almonds
¼ cup pine nuts
1 cup kale, chopped
½ cup baby arugula
¼ cup black olives
1 garlic clove
1 tablespoon extra virgin olive oil
1 meyer lemon (or regular), juiced
1 red bell pepper, seeded and quartered
Recipe Directions
Combine all ingredients except the pepper in a food processor and pulse to combine. Fill the pepper quarters with the mixture and eat with fingers! For a potluck or party cut the peppers into smaller pieces and spread mixture on top.
Amysue's Thoughts

This is a quick and scrumptious Italian flavored meal. Any green can be substituted for the kale, and the almonds can be soaked, unsoaked, dehydrated, whatever you like.

The ones I use are oil-cured black olives in the refrigerator section.
