Yield
8 small loaves
Ingredients
- 3 cups grated apples (approx. 5 medium apples)
- 1 1/2 cups almonds
- 1 1/2 cups dates
- 2 teaspoons cinnamon
- 1/2 teaspoon sea salt
- 1/3 cup psyllium husk
Recipe Directions
- 1. Shred chopped and cored apples in a food processor with a grating attachment (or by hand). (Do not bother peeling the apples.) Place shredded apples into a huge bowl and set aside.
- 2. Process almonds in an empty food processor. Process into a fine meal.
- 3. Add dates, cinnamon and salt to nuts in food processor and process again until well mixed.
- 4. Remove mixture from food processor and add it to the big bowl that contains the shredded apples. Combine with spoon or hands. (Mixture will appear dry but will get moist as you mix. Do not add any extra liquids.)
- 5. Stir psyllium husk in by hand until well-combined.
- 6. Form into 8-10 small loaves. Place on parchment paper.
- 7. Dehydrate on high for one hour. Reduce to 110 degrees for another five hours or until desired consistency is reached.
- 8. Store in refrigerator.
The Rawtarian's Thoughts
By The RawtarianThis recipe isn't too sweet. It's subtle. It's perfect for breakfast on the go! A slice of this bread recipe, a crisp apple and a nice tall glass of cashew milk would be a lovely breakfast!
If you want to serve it dessert style, try icing it with a white icing. Iced slices should be stored in the fridge at all times, otherwise the icing will soften too much.
If you don't have almonds, you can use walnuts or pecans instead.
Don't eat too much of this stuff at once, since this recipe uses psyllium husk.

Loving your website and all the delicious food.
Just a question regarding this and the raw apple walnut cake, how do you stop the apples turning brown and how long can you keep these for?
Thanks

Hi Amanda! You can't really keep the apples from going brown in this recipe. :)
They keep really well - in fridge for up to a week, or in freezer for up to a month. (note - defrost before using if frozen)

Try sprinkling them with a little lemon juice while pulsing!

I'd love to make this recipe and wonder if I could omit the dates? I have apples in the apartment and don't have a problem with them, however I don't don't keep dates around because I have noticed I react to the sugar. I also have maple syrup which I tolerate well and could add that as well. Would you recommend I make this recipe without the dates? I also could potentially make another bread that doesn't use dates/sweetner if you recommend another bread more than this one? Excited to make one of your breads!

Hi Henry! Do not omit the dates. They are required for both sweetness, stickiness and bulk.
You can use raisins instead, but they might not work for you because they are also very sweet.
You can also try dried apricots - they will have similar stickiness and bulk, but much less sweetness than dates.
Hope this helps!

Just finished the apple bread, had my first one right out of the dehydrator and they are delicious!! People think I'm crazy because of how I eat, after sharing the zucchini bread with a few people they are starting to understand how I can do it. So yummy!

Thanks for sharing, Alaina! Some folks shy away from dehydrators, so hopefully they'll read this and give dehydrating a try!

I find whole psyllium & ground psyllium. Nothing called husks. When U say psyllium, do mean whole psyllium seeds? Or ? If U meant ground psyllium, what would U say? Sorry to b such an ignorant newbie. U have probably answered this question a million times but I dont know how to find it. TY for Ur contagious enthusiasm, steadfast devotion, gifted brilliance n creating not only these recipes but all the technology to share them!

Raw apple bread recipe
This is so delicious. I have never used psyllium husk and it is amazing how spongy it makes the bread. I added a little fresh ground nutmeg. This reminds me of the flavor of apple pie. I love it!
