  • 1. Place sunflower seeds in food processor. Process into a fine meal, might be slightly grainy.
  • 2. Add cashews and continue to process into a fine meal.
  • 3. Add dates a few at a time and continue processing until the dates are well processed and the mixture resembles a coarse cookie dough. You should barely be able to recognize the dates or seeds/nuts, everything should look small and crumbly.
  • 4. Add the cacao, coconut, coconut oil, honey, vanilla extract and sea salt. Process again until everything is well distributed and fine. The cacao should have made everything look dark chocolatey color, and the mixture should still resemble slightly crumbly cookie dough and should stick together when you pinch it between your fingers.
  • 5. Dump mixture into a big mixing bowl. Add the optional goji berries and hemp hearts. Mix with a spoon until superfoods are well distributed.
  • 6. Dump superfood brownie mixture into two square glass pans or pie plates or brownie dishes.
  • 7. With clean hands. press mixture down into pans so that mixture will stick together and will resemble brownies or squares.
  • 8. Ideally, you will now refrigerate them right away for at least an hour minimum. (This will make them easier to slice.)

The chocolatey flavor and a little bit of satisfying crunch combine to make these the perfect raw dessert recipe of all time. 

I don't really believe in the crazy power of superfoods and I don't use them very often--mostly because they are so expensive. But it is fun to add some variety to recipes by adding some extraordinary ingredients like hemp hearts and goji berries on occasion. The below raw brownie recipe does call for some exotic (AKA expensive!) ingredients. If you're on a budget or don't have them in the house,  you can omit the goji berries and the hemp hearts, and the recipe will still come out fine but it just won't be a superfoody or as crunchy :)

This is a pretty easy raw superfood brownie recipe. Just process most of the ingredients in a food processor, then mix in the goji berries, hemp hearts (and optional additional sweetener) by hand. Then press into two glass brownie dishes and refrigerate.

Also, if you're feeling extra enthused you can whip up an icing to go on top (raw chocolate icing or raw vanilla icing or raw strawberry sauce). (However, icing is definitely not necessary.)

DELICIOUS!
First recipe I tried from your site and love it. Made a few substitutions (did ½ sunflower seeds and ½ pepitas soaked overnight and then dehydrated to dry a bit). Did a ¼ of shredded coconut and a ¼ hemp seeds to bump up the Superfood side of things. Plus swapped goji berries (which I don’t like at all) with Bee pollen. Biggest challenge was getting them into a pan as I was gobbling right out of the mixing bowl. My new breakfast bar! Thank you!!!

Could I use raw honey instead of dates?

Hi Tristan,

In this recipe, dates are used for 3 reasons: sweetness and stickiness and bulk (volume)

The honey would be a good substitute for the sweetness, but the consistency wouldn't be right without something else to sub for the bulk/stickiness.

Not sure why you don't want to use dates, but you can use raisins instead with no other tweaks necessary.

You can also use honey for sweetness and use dried apricots for the stickiness and bulk.

Actually, both my daughters (aged 3 and 5) help make them but it's my 5-year-old that loves them the most. I chuck the sunflower seeds and cashews in together at step 1, along with a couple of heaped tablespoons of ground chia seeds (my kids aren't keen on the texture of whole chia seeds). I also substitute the goji berries with cranberries. No-one here stocks/knows of hemp hearts that I can find so I use hemp powder.

Delicious and all my friends ask for the recipe. Thanks LJ!

You can get them at your local health food store. Not sure if they are sold at Trader Joe's.

Also, if you can't find them you can omit them from the recipe or use dried coconut instead

Made and froze these Monday evening for my child's birthday yesterday. I also used the icing recipe on top of the brownies. I must say, these are (I say "are" as we still have a couple of bars left) these are as filling as they are decadent. I did not have unsweetened shredded coconut (and I live in the tropics -- go figure!!), so I substituted the ingredient with coconut milk instead. This, paired with raw, Guernsey milk vanilla ice cream was over-the-top delicious. Needless to say, everyone loved the brownies.
