Joined January 21, 2008
Hello-

I have been a vegan for the past 18 years. For the early years I ate a lot of carbohydrates, the health food “junk food” products such as rice, soy yogurts, rice, soy cheeses and all that other stuff. I never felt quite right and always felt best when eliminating the cooked starched such as whole wheat pastas, breads, potatoes , rices and of course processed junk food from the health food store. I felt natural whole foods was the way to go. I have always been into juicing, even before I was a vegan, thanks to my mother giving me carrot juice at 4 years old, juicing has always been a part of my life. I am now trying to keep as much of my diet raw as possible. I tried experimenting years ago after I picked up Juliano’s book but all of the recipes got me too overwhelmed and went back to my way of eating. I have since revisited raw and truly feel in my heart this is the right way to go, but simplicity is best, fresh fruits, vegetable juices and big salads of sprouts, greens and whatever is fresh on hand. I have an amazing nutritionist, Dr. Fred Bisci, who has been on a raw food diet for longer than I am alive and he has totally re-inspired me. There are times I go through detox and feel crappy and times I have cravings but I get through it by steaming some crunchy sprouts or zucchini a few times a week at this point on my raw journey and I know I am on the right track. I have also bought a lot of those raw dehydrated snacks they are now selling at the health food stores such as the raw flax crackes and raw cacao nut bars. These things have gotten me through the initial weeks of going raw but honestly feel awful after I consume them. Fresh, simple foods for me work best and I hope to find inspiration from people here or inspire others.

xoxo Jessica
