-
Yield
4 generous servings -
Equipment
None
Ingredients
2 heads of broccoli (chopped into bite size pieces)
5 cloves garlic (finely chopped)
½ cup olive oil
1½ tablespoons lime juice (freshly squeezed)
2 teaspoons cumin
Sprinkle of sea salt
Recipe Directions
1. Mix garlic, olive oil, lime juice and cumin in a jar.
2. Pour over broccoli and salt to taste. The key to this dish is to let the dressing marinate with the broccoli for several hours or days. I find the longer it marinates the better it tastes.
3. Let it marinate at room temperature for at least an hour before eating though.
4. I also store it in a plastic container with a lid in order to give it a few good shakes every so often and spread the dressing around.
GermanGirl's Thoughts

For all you broccoli lovers out there, this is hands-down my favorite recipe.
The original recipe steamed the broccoli lightly, heated the oil briefly, and used red wine vinegar.
I find this tastes just as good, if not better!

I will try this one soon for sure. I love Broccoli and not just to spite Bush, but that's an added bonus! I love the 'shake it once and a while' tip. That's the kind of little gem that makes life nice for someone just starting out. Cheers GermanGirl!

Wow, I just made this and it is really good even BEFORE it has marinated. I can't wait to see what it is like tomorrow.
Oh, and I cut the oil in half to reduce the fat intake. Still is delicious.
Thank you so much for the recipe.

I loved this! I put my own twist on it, I added a hand full of goji berries and 1 tablespoon of hemp seeds. I put hemp in everything. Yes, I ate the whole thing in one sitting, well standing. I couldn't put it down! Thanks!!

This is great! And so simple. I love broccoli and am so glad that someone made a recipe that does not include nuts! Thanks so much. This is in my recipe book.

Definitely give this a try then Angie. The combination of the lime juice and olive oil 'cook' the broccoli and soften it. That's why I recommend letting it marinate for a day or two first.
