This dish is even better than dairy. My boyfriend loves creamy things and this totally hits the spot when you want something rich and super easy.

Ingredients
2 Zucchini
¾ cup Pine Nuts
1 Green Oninon
3 clove Garlic
2 tablespoon Extra Virgin Olive Oil
Juice Half Lemon
2 tablespoon Water
1 teaspoon salt
fresh cracked pepper to taste
1 tablespoon Tarragon
Recipe Directions
- Spiralize 1 large or 2 small to med Zucchini in a spiralizer. A mandolin would also work as well.
- Put all ingredients in blender, blend slow at first then increase speed to the max. The sauce is best nice and thick, you may need to add more water. but don’t add to much when the zucchini is incorporated it will sweat a bit.
- Toss the zucchini with blended sauce.
- Serve with some tarragon sprinkled on top, basil would also work as well.
