Yield
one big smoothie
Ingredients
3 fresh organic lemons, Squeeze juice, zest the peel of 1.5-2 lemons
1 cup fresh blueberries
1 cup coconut water, I use ONE from WholeFoods
1 cup cashews or sunflower seeds
Recipe Directions
Take your cashews (or sunflower seeds, I have made it with both) and blend with coconut water until you get a nice “milk” like substance. It takes me about 7-8 minutes of blending with a regular old osterizer. Add in lemon juice, zest, and blueberries. Blend until smooth and serve.
Lmgreen's Thoughts
By lmgreenI am a huge fan of blueberry lemon cheesecake, this was my more healthy raw friendly approach. I am going to try to make the cheesecake version next!

Thanks Maxinatux, I am finally getting brave enough to make my own recipes so I am excited to share the sucesses. I also add some greens when I use this mix in the morning. It makes a really pretty look if topped with a shot of wheatgrass.

Ooh, wheatgrass would be good! I'll have to try it the next time I make this.
