Yield
12-15 small balls
Ingredients
1 cup dates
2 tablespoons water
2 teaspoons vanilla extract
2 tablespoons cacao nibs (ground)
Pinch of sea salt
1/3 cup shredded coconut (unsweetened)
2 tablespoons raw coco powder
½ cup nuts (pecans, almonds, macadamia, etc.)
Recipe Directions
1. Place all ingredients, except coconut, in blender until you get a doughy chewy consistency.
2. Add water or coco powder to adjust.
3. When done, roll into balls and dust with coconut shreds. Eat with strawberries for a fresh chocolate and fruit treat!

Chocolate coconut truffles with cacao nibs for a healthy boost of antioxidants.
Every time I make these, they are gone in a jiffy.
These are light and delicious.

I made these with hemp hearts instead of nuts, which made the mixture need more cocoa to be doughy enough to roll. I rolled them in hemp hearts instead of coconut. I brought them to a potluck, called them Dark chocolate hemp truffles... they were gone so quickly! They are extremely rich, especially with the added cocoa. Yummy!
