Serves 1 or 2
Ingredients
1 tablespoon olive oil
½ teaspoon Italian seasoning
¼ teaspoon garlic granules
¼ teaspoon onion powder
¼ teaspoon sea salt
2 ears corn on the cob (shucked, trimmed)
Recipe Directions
1. Mix oil & Italian seasonings in a small custard cup; stir well and let sit for about 15 minutes. Meanwhile shuck and trim corn.
2. Mix the garlic, onion powders and the salt in a small dish; set aside.
3. Heat dehydrator and set up dehydrator tray with Teflex sheet lining.
4. Place corn on Teflex sheet and brush all over with oil-herb mixture.
5. Heat in dehydrator for about 30 minutes before serving time.
6. Remove corn to plates and sprinkle with salt mixture.
7. Serve and enjoy!

I love raw corn on the cob, especially now that it's in season. I don't bother with the dehydrator though and it's amazingly delicious. I think it's better this way than cooked corn. But I think it has to be fresh and in season, we get our corn from a local organic farm and eat it the same day. The corn at the grocery store is going to be more starchy because the sugars start turning into starch with in a few days.

I had to do without dehydrating because my cheap Nesco doesn't provide enough room for the cob. Next time I am going to scrap the kernels off, season it, then dehydrate. Anyway, I rubbed some olive oil on the cob and then seasoned it, very tasty. I didn't realize how good raw corn could be. Thanks for the recipe. I hope you use it in a number of ways.

Hi avocado_love, I am sure it would be great without the dehydrator... but the bit of warming allows the herb flavor to soak in enhancing the experience!
I agree about "it has to be fresh"... I never buy corn that has been torn open... that is one of the things that makes it lose its freshness almost immediately.
Nature has given corn this neat little package... with the cornsilk (which btw I keep for medicinal tea) and the husks, but some people just love to tear each ear apart... and some stores (yes, even the health food stores) will shuck them and sell them all cleaned... I will never buy them like that!
