Sahara's Thoughts
By saharaThis is amazing, not exactly the same consistancey as mashed potatoes, but it is really really good.
This recipe is very simple, but I first saw it published in Matt Amsden's book RawVolution.

Nice recipe. I _just_ made a different version from TheDailyRawCafe.com, but used: cashews, nutritional yeast, black pepper, a couple more garlic cloves, a bit of water, and I skipped the oil.
Regardless of which nuts you use or how you season it, whipped cauliflower is the new whipped potato.

I just made this recipe today (I also have the RAWvolution book) but I really didnt like it! I dont know if I put too much olive oil in it, or the bitterness of the cauliflower just didnt jive well with me... but bleh, I need to alter it so I dont waste the whole batch.
