This is just an easy snack to make. Obviously you can add other ingredients – like onions or diced cucumbers etc… and make it more of a ‘salad’, but lime, mesquite, & cayenne just seem to go so well with raw corn. It’s sublimely simple and tasty.

Ingredients
2 small/medium ears corn
1 whole lime
1 heaping teaspoon mesquite powder
1/8 teaspoon cayenne powder
Recipe Directions
1. Husk and rinse the corn, slice it off the cob.
2. Juice the lime and pour onto the corn niblets.
3. Add remaining ingredients. Stir and enjoy.

Actually it really isn't too hot - unless you put in a lot of cayenne. Mesquite is actually a teeny bit sweet. (or at least the kind I have is!) :)
