Thanks, ilikenuts! I've always thought of myself as a bit of a "foodie". Uncooking is a welcome new challenge! Lately I've been going through my old cookbooks for inspiration. I've found so many good ideas that can be applied to raw food. Look forward to a "Moroccan Carrot Salad" sometime soon.

Hi Shawnette,
"Raw bacon" is eggplant, peeled and sliced very thinnly with a vegetable peeler. Marinate it in olive oil, ume plum vinegar, agave or maple syrup, and spices (paprika, cayenne, black pepper). Then dehydrate until dry and chewy. There is a recipe for it on Goneraw, just search "raw bacon" and you should find it. I make mine a little different each time.
