This is a very tasty and brilliantly colored salad. The addition of walnuts makes it a meal! I took the picture before the beets turned everything pink!

Recipe Directions
1. Mix beets, celery, apple, and currants in a bowl.
2. Mix all other ingredients, except walnuts, in a jar and shake well to mix.
3. Pour dressing over salad.
4. Top with desired amount of chopped walnuts.

i do not love beets, but i will try this. i've had beet salad that i liked, they were cooked though.... do RAW beets taste like cooked beets? are they crunchier when raw?

they are much crunchier, they taste similar raw, but i think they're a little sweeter and maybe earthier. i love them any way, it's hard for me to say. the dressing really goes well with them, i hope you try them and like them
