I just made this, without the oil, and it is delicious! I had some raw edamame from a CSA bin, so I soaked and sprouted the beans and then added them too!

This will definitely be on my regular list of recipes.

Hi, Maihio! I tried your recipe and added a few ingredients: a dash of cayenne pepper, 1/2 tsp sea salt, 1/4 cup of lightly roasted/salted cashews, "smoked" sun dried tomatos (soaked in the 1 tbsp of olive oil), 1/4 of fresh red pepper (sliced) -- processed all on high speed for 5 mins... then poured creamy mixture into soup bowl and added the corn, 1 tsp sunflower kernels, 1 tsp chia seeds, a pinch of Alfalfa sprouts, a splash of soy sauce, and maybe five tiny drops of Sriracha HOT chili sauce ... snapped a photo, tasted the soup, took a little trip to the Moon and back (a few times, actually ?) ... then sat down to write this review. Lastly, my extra ingredients were only optional, your recipe was great and more on the sweet side, but I like my tomatoes on fire (spicy hot)!!!
