Ingredients
- 1 cup cashews
- 1 1/2 cups water
- 2 tablespoons agave nectar (or honey)
- 1 tablespoon pure vanilla extract
- 1 teaspoon cinnamon (or cardamom)
- 1 pinch sea salt
- 1/3 cup chia seeds - reserve!
Recipe Directions
- 1. Blend cashews and the water until nice and smooth.
- 2. Add everything else (except the chia seeds). Blend again.
- 3. Place the chia seeds in a bowl. Add the blended mixture. Stir thoroughly to ensure the chia seeds are well distributed.
- Cover and refrigerate overnight (or for at least 3 hours).
- Eat in the morning or for dessert in the evening! Stir well again before eating.
- This is a delicious raw chia tapioca pudding recipe. The chia seeds become gelatinous and really remind me of good old-fashioned tapioca. Mmm!

One of my favourite foods right now are chia seeds.
What is their claim to fame (besides being known for sprouting those famous "chia pets")?
1. They become gelatinous, like tapioca, which makes them fun to use!
2. They are very filling.
3. They have an interesting texture which is a nice addition to the raw food lifestyle. (Jelly-like balls!)
4. Chia seeds are an incredible superfood.

I had some soaked dried apricots that i chopped with one of those hand choppers and added it into the mixture.. was a nice added sweet punch of flavor :)

Hey N,
The recommended daily intake of chia is 1 tablespoon (dry). It’s fun to eat and highly nutritious but it’s exceedingly absorbent, (absorbs 18x it’s weight) So always be sure to hydrate it before consuming it and drink extra fluids if you are eating it in excess.

I used to make this pudding often,... not to be gross but because it's so fibrous it really promotes bowel movements but after a few days in a row of eating it, it seems to then create very hard stools to pass. The seeds are actaully visible.
I will say that my ratio of seeds to liquid is probably closer to 1 to 3 as opposed to your 1/4 cup to 2. I won't hold it against you for not publishing this post but would appreciate an educated answer - if you have one.

well, i'm behind in the times. Yesterday was my first chia pudding experience. WOW!. I'm in love. Difference is they made it with almond milk. Wow it's amazing. Simple. no fruit, just almond milk, agave and vanilla. Also, new to your site. Pretty nice. lol
And i'm learning all the greatness that chia has to offer. Extremely healthy.

Nice!! I'm trying my best to transition to a majority raw food diet, and having such fun experimenting with new recipes. This one sounds just like my style - simple and fussfree....and I have all the ingredients. Think I'll give it a go in the next few days!
Thanks so much for the recipe. I've been sprinkling dry chia seeds on my cereal and everything else I can think of, but I had no idea they go gelatinous when soaked. Oh, the possibilities...:-)

This makes a rather large amount. How long will this keep in the refrigerator?

Hmm, it'll keep for a few days, but it is best eaten within 24-48 hours. Also, sometimes after refrigerating a light film will gather on the top layer of the pudding. Don't worry, just stir it up.
It doesn't actually make THAT much, and it's easy to eat and light tasting so it doesn't last long in our house of 2.

Skipped my morning Acai shake (Acai, Banana, Hemp Milk, Honey), instead, whipped up a batch of Chi-Tap-Pudding..drank it with a straw, gave me some serious energy, just what I needed for the early morning surf session!

And I certainly would not doubt that it's fattening, Julie. I don't tend to weigh myself, but I can just kind of feel that it is really heavy and sits full in my stomach. Guess we better control ourselves and only have it once and a while, huh?
I do think it's important to have really nice ****raw*** recipes that we feel are major treats, though. They help us stay raw, IMO. Bye!

Lol, I am so glad you like it! Yes, if I am home alone for a long period of time, sometimes my husband comes home and if I am all lazy or lethargic he will ask me, "Did you eat another batch of chia pudding all by yourself while I was out?" :))

I love this recipe! In fact I liked it so much I made it a 2nd time within 3 days time. However I think it is fattening (as after eating both batches by myself) I gained a couple lbs.
Maybe next time--however hard it will be-- I will share... :)

Just in case anyone is considering making it, it is my #1 favourite recipe of all time. Just try it!!!! You'll be glad you did. Make sure you're mixing and stirring it really well though at the end. Perhaps just bring the bowl in front of you while you watch TV and stir it for a long time. Then put it in the fridge.
