  • 1. Place walnuts in a food processor. Process them until they are in very small uniform pieces (Mindi suggests that they should resemble cous cous.). Transfer the ground walnuts to a bowl.
  • 2. Place chopped zucchini in a food processor. Process the zucchini until it's in very small pieces. Add the processed zucchini into the bowl that already has the walnuts in it.

  • 3. Add ground flax, hemp seeds and salt to the bowl.

  • 4. Stir well until fully mixed. Add enough water to make spreadable dough ( 1/2 to 1 cup)
  • 5. Spread the batter onto two dehydrator trays.
  • 6. Dehydrate at 115 degrees for the first hour, then lower to 105 degrees for the remaining time. Once they start to stay together very nicely (after a couple of hours in the dehydrator), remove them from the dehydrator. Take a knife and "cut" where you want your cracker lines to be. Once they're done (I dehydrate these for approximately 12 hours in total, because I eat them so fast that I like to leave a tiny bit of moisture still in them. You may need to leave them in longer depending on your batter and the moisture in the air), you'll be able to simply snap them along the lines that you made in the dough.
  • 7. You'll know that they're done when they look and taste like delicious crackers and snap easily. If they're still kind of wet or doughy, they are not done.
  • 8. Serve with thinly sliced tomatoes, avocado, sprouts, etc. They're crackers, so do whatever you like with them! Store them in a tightly sealed container.

These crackers have been described as the raw food alternative to the "Ritz Cracker." Well, perhaps they don't taste exactly like raw Ritz Crackers, but they sure are savory, buttery and they melt in your mouth. Pure raw cracker bliss!

Hey Beautiful! LOVE these crackers! I am allergic to hemp & just add a couple more T flax meal & 1T psyllium powder & they are fantastic!! Do You mean spread on dehydrator TRAY or silicone mat/parchment paper? Do You dry them on rack after spreading on sheet?? I didnt have an easy time spreading on rack/grate. TY for Your brilliance & devotion in helping so many!!

First, spread them on the parchment paper when they are very wet.... Then, once they are pretty dry, you can peel the paper (easily) from the crackers. (If it is hard to get the paper off, then it's too soon and they are too wet to remove the paper.)

Then, once they are pretty dry, you can put them directly on the trays... we remove the parchment paper near the end to help them dry out properly. (The paper inhibits the airflow, which is why we remove it. But without paper at the beginning, it's way too messy. )

Pecans instead of walnuts are a perfect substitute in pretty much any recipe. They have a similar texture and oil content, so they are pretty interchangeable. I'm so glad you made a good substitution choice and that they turned out well for you, Sharita!

In this recipe, the hemp seeds are important, so I don't suggest any substitutions.

However, I have lots of other raw vegan cracker recipes, so I suggest you find another recipe that floats your boat!

Why do you say we don't have to soak the walnuts? I thought you were supposed to soak raw nuts for better digestion?

Hi Melini,

In this recipe, it works best with DRY walnuts.

If you really want to soak them first for better digestion (and to remove the enzyme inhibitors), you can soak them, rinse them, then dehydrate them or let them air dry again, then you can use them as is.

Yummmm! These were surprisingly tasty. I think this will be my favorite go-to cracker recipe. I did spread my recipe out thinly so I had light crispy crackers. I started eating them after a total of 6 hours dehydrating. There were a bit moist, but I doubt they'll last more than a couple of days since I would've eaten them all in that time. I'll definitely have to make a double batch next time and let them dehydrate longer so they'll keep longer.

Hmmm... good question, France.

I think substituting HALF of the walnuts for hemp seeds would work out okay, but I think using some nuts might be needed, otherwise they might turn out to be too moist.

These don't taste like zucchini, so I think you'll be fine.

Don't substitute the zucchini in this recipe, they won't work out. The zucchini is important for the texture.

I actually used Yellow (Summer) Squash instead of Zucchini simply because the ones at my market looked sickly and the yellow ones looked better. I would imagine they share a texture and only a slightly different flavor. They really are scrumptious!!

What dehydrator do you use? I use the excalibur and only had been able to fill one dehydrator tray.....
I cannot comment the crackers- they are still dehydrating. I'm looking forward to tray them ! ( sorry for my english, I'm from germany)
