The more I learn and live the more I am steered in the direction of a raw, low-fat, vegan diet. I am currently eating some cooked foods, including some grains such as oatmeal and whole wheat bread. I would like to try to eliminate wheat and gluten. I try my best to avoid all processed foods, but sometimes I need to let myself relax and be ok with a little store bought soy or almond milk or cereal. It's no good if you eat perfectly healthy but kill yourself mentally trying to do it. I just want to do the best I can. I have fun with it all. I would love to be able to have all my food be local and organic, but that is not possible for me, and again I have to keep reminding myself that I am doing the best that I can, and am continually doing what I can to improve. I am not a fan of high fat foods, so try to stay away from avocados, coconuts, nuts and seeds. I also try to avoid dried fruits because they are so calorie dense. I am not a huge veggie fan as I am very sensitive to bitter taste, thus, most of my veggies are the greens I put in my smoothies, raw carrots, or cooked broccoli. I love to be creative and try new things with raw foods. I just wish that there were more recipe ideas that did not call for nuts, avocados, or dried fruits. I am also on a search for a good salad dressing recipe that doesn't call for the above! Oh, and did I mention that I am in love with banana 'ice cream'? YUM.</p>
