  • 1. Throw all ingredients (except last 1/2 cup of red peppers) in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let this raw red bell pepper soup recipe blend in the Vitamix or Blendtec blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw red bell pepper soup recipe.
  • 2. Transfer raw red pepper soup to a bowl. Add the remaining 1/2 cup of diced red peppers and mix gently with a spoon.
  • 3. Garnish with whatever you like! I simply sprinkled my soup with some dried basil. Eat immediately.

Big thanks to Julie K and her comment on my raw tomato soup recipe for inspiring me to modify one of my existing raw soup recipes to come up with this super creamy raw red bell pepper soup! This recipe is super simple and requires only a blender to make.

It's also very quick to pull together if you have two red peppers in the fridge, as well as some cashews in the cupboard.

By the way, red bell peppers are sweet. So do not use green bell peppers for this recipe since they aren't sweet enough!

This raw red pepper soup recipe makes a nice big bowl for one person. :)

Hi Adam, using roasted red pepper would no longer be raw, but if you are okay with that then I presume it would turn out okay. It is very flavorful on its own though, and in my opinion roasted is not necessary.

A great recipe! I tried this today, and loved it! I am incorporating more raw foods into my diet with the goal of eventually going totally raw. This was so yummy and nourishing. I can't wait to try more recipes.

Made 3 serves of this for a spring lunch today. Husband and guest both liked it. My husband says it reminds him of a summer gazpacho. Because it warmed a bit in the vitamix, I definitely found it very tasty!!!

Thanks so much for this recipe! Question: i want to use this soup for lunch, but i saw that for shelf life you put: eat immediately. Is there any way i can keep it long enough for lunch?

Hi Erika! You can keep in fridge for up to two days, but I like eating immediately because I don’t really like cold soup straight out of the fridge :) You can always blend it up again to warm it up, or just place in pot on stove to take chill off (to get it to room temp) – if you can put you pinkie in it then it is still raw temperature :)

If I don't have a Vitamix, could I use a food processor? Do you think that I should soak the cashews for a few hours to make blending them easier?

Hi Kara,

Ideally this should be made in a blender, but I think what you suggested is a reasonable solution. It would get quite as smooth though.

Make sure that your cashews aren't too wet - then the soup will be too runny. So do pat them dry before using

Tried the soup and was pleasantly surprised at how great it tasted. I also tried the carrot ginger and the French onion and loved them also. I'm sold on the raw soups.

Love it! I actually had a few dehydrated red peppers for that "roasted" taste. Plus I added some raw corn on the cob. Yum. Great site.

2. Generally, these groups of nuts can be substituted for one another:
creamy nuts: cashews, macadamia nuts, pine nuts, etc.
flour-like nuts: almonds, sunflower seeds, hazelnuts, pumpkin seeds, etc.
oily nuts: walnuts, pecans, etc.

Also, if the fam liked this one you could also try the tomato soup and the corn soup and the celery soup. They are all based on a similar premise. And it's nice to switch it up a bit

hi! Just tweaked this a little and instead of using cashews i replaced it with avocado tasted just as good and thought i would pass it on for anyone who doesn't want to use nuts

When you say 1/3 cup of cashews do you mean chopped or whole, because whole would be a lot less than the chopped

This is absolutely delish!!! For an intense flavor, put roughly chopped pepper in the dehydrator for several hours before blending. It's like roasted red bell pepper soup!

Hey, I love your website! Always looking for simple ways to make my food, I spend way too much time thinking about what I'm going to eat!

By the way, I noticed that a lot of raw food recipies include cashews but I've found that they are very difficult to find raw. Where do you get you cashews from? Do you soak them?

Hi Jessica, I look for untoasted unsalted, which are easy to find. There is some controversy about whether they have been heated - as some cashews labeled "raw" may not actually even be raw. But unsalted untoasted is a good place to start

I was wondering if any of the raw soups can be heated once blended if the blender doesn't heat it up enough. I'm new to the "rawtarian" way and have cut out meats (still have mild cravings!! -_-) but now looking for new and exciting dishes to make, so thank you for this site! Its been extremely helpful!

Hi Eva, you can let it blend for a long time to take the cold edge off - also you can reheat in your dehydrator or some people might warm on low in a pot

Yum! Thanks for the recipe!!! My husband and my meat-eating mother in law loved it too :) I just need to convince my 2 year old... By the way, my husband would like the (soaked, raw) cashews more blended so it is smoother. Is this b/c of my low quality blender? Would a higher quality blender like Vitamix work?

Hi Tanya, yes, a better blender would definitely do the trick. But if it's not possible to upgrade blenders, you are correct -  soaking for an hour or two in warm water will help to soften the cashew and make them blender better. Also, perhaps you needed to let it blend more as well

A stick type, hand-held blender also works quite well for blending things a little finer than your average counter top blender, and they're quite affordable too. I used one to make this recipe and it came out smooth.

Hi there, I've been toying with the idea of going doing a 30 day raw challenge for myself (to be fair, my 30 day vegetarian challenge converted me full time veg a year ago), and was doing my research. I came across your page, and am considerably more excited about going raw now! I want to double this recipe but don't have enough cashews even for the regular size can I substitute most of the cashews with a different nut? I have macadamia, peanuts, sunflower seeds, almonds as well as other seeds. Thank you

Hi Laura Jane. I tried to make this from memory and I mistakenly put in too many cashews. So after verifying your recipe, I added more water (¾ cup cashews and just over 1 cup of water). I only had 2 peppers so I used them both. I added a clove of garlic, a bit of hot sauce, and some pepper along with the salt.

I thought it tasted really nice, but I didn't like too much the diced peppers in the soup, and so I ended up blending them all in. Overall, it was smooth and very tasty. I really enjoyed it. Thanks :)
