Peach Pie

This was the first raw cake I presented to my parents when they visited me in August.

I was so glad. They were really enthusiastic about it.

Helen's Notes:

- you can use any kind of nuts instead of the coconut flakes.

- you can make the crust the day before, so that it gets firmer during the night.

- it tastes good with cashew-coconut cream. You can see in on the picture.

TiRAWmisu

I made this raw tiramisu for a raw potluck, and this turned out to be the fast seller of the buffet.

Mango Coconut Green Smoothie with Goji Cacao Sprinkle

As well as looking pretty sitting on the top of this green smoothie, the goji berries and cacao chips force you to drink your green smoothie more slowly so it lasts longer.

Kalamata Karma Dressing

A quick and tasty dressing, especially for heirloom tomatoes.

Since I am not 100% raw, I added a few capers and a drizzle of balsamic when I ate it:)

Raw Sweet Potato Gnocchi with Pesto

This recipe is inspired from Lettuce Love.

I added crushed dark chocolate around my gnocchi for some fun.

Spiral Salad

This turned out so pretty I had to share.

I love using my spiralizer for carrots because it produces such cute little curls.

Since it was already out, I used it for the yellow pepper too and it worked great!

Spiced Blueberry Almond Granola

A wonderfully spiced and sweetened granola with almondy crunch and blueberry goodness.

Note: To extend the freshness of this granola, leave out the blueberries.

Because they don't fully dehydrate, the granola needs to remain refrigerated and doesn't last as long.

Add fresh blueberries before you enjoy.

Pickle-Dilly Salad

A cool and crisp cucumber salad!
