Ingredients
1 head cauliflour (cut into florets)
6 medium sized sunchokes (cut into bite size pieces)
1 tablespoon garam masala
1 teaspoon cumin
1 teaspoon corriander
1 inch minced or juiced fresh ginger root
2 tablespoon olive oil
2 tablespoon lemon juice or less to taste
1 tablespoon minced shallot, optional
Recipe Directions
1. Chop, mix and dehydrate until desired “softeness.” I added a few carrot slices for color and sweetness. I myself would opt out of the lemon for my own tastes but i imagine its sweeter in person as cooked cauliflower always seemed to sweeten.

By omshantiI recently saw a post wanting a version of aloo gobi, looked it up on line, and think I got the basic flavors.
It is fried usually which is what makes it so good and greasy.
This is dehydrated so the soft squishy nature of the is not necessarily there, but the sunchokes are a great potato substitute.
