Ingredients
2 Fuji Apples, Cored and quartered
¼ Head of Cabbage, Cut into smaller sections
2 Carrots
½ Red Onion, Quartered
½ cup Olive Oil
¼ cup Water
¼ cup Vinegar
Juice of 1/2 Lemon
¼ cup Orange Juice, or 1 orange freshly squeezed
2 tablespoon Honey or 3T of Raw Sugar
1 Clove Garlic
¼ teaspoon Sea Salt
¼ teaspoon Pepper
Recipe Directions
Combine oil, water, vinegar, sweetener, lemon juice, orange juice, garlic, salt and pepper in a blender and blend until creamy. Set aside to let the flavors mix while you make the slaw.
Using the shredding blade on your food processor (or by hand if you are a glutton for punishment!) process apples, cabbage, carrots and onion.
Combine in a bowl with the vinaigrette and let marinate for an hour or more. It will bring out the best flavors.

I would say it serves 4 as a meal and double as a side. Of course, it really depends on your appetite!

This was delicious. I didn't have any lemons, but it was great without it. Even my hubby and a friend thought it was great (I didn't tell them it was raw or they wouldn't have tried it! ha!). In fact, they ate it all last night when I wasn't looking! Great when you want something different...a nice change from a salad. I will be making this regularly!

This looks amazing - I have been looking for low fat/cal salads, and this has imediately gone into my recipe book. I can't wait to try this, espically with all the different flavors. How many servings does this recipe yeild?
