Ingredients
a few kumquats
1 small pink grapefruit
1 avocado
1 handful of bibbed lettuce
1 handful watercress
Dressing:
¼ cup raw agave nectar
½ tablespoon ground mustard seeds
2 tablespoon water
2 tablespoon olive of flax oil
splash apple cider vinegar
Recipe Directions
Roll the kumquats between your fingers to release the natural oils. Cut in half. Peel and section a pink grapefruit. Cut sections in half. Cut avocado into cubes. Tear lettuce and watercress into bite sized pieces and mix the whole lot together. Make a prepared mustard with ground seeds, ACV and water, let it sit for a few minutes. Mix the dressing ingredients and toss with the salad. Serve on a bed of green leaf lettuce.

It depends on the size of the kumquats. Big ones, I'd quarter, small ones I'd halve. I haven't made this yet, but it sounds like a salad that I would love. I'm fascinated with kumquats and wasn't sure how to eat them. I make the dressing all the time for various salads. I like to add maca or blended nuts and use it in cole slaw mix with red grapes and with spinach, green apples, spring onions and arame (sea vegetable). I'm hungry, can you tell?

Looks as if it looks fantastic and tastes exotic - all that creamy avocado against the bitterness of the other two fruits...... if you were making it again would you halve the cumquats or quarter them?
