Kandace's Thoughts
By kandaceThis is a quick, easy, and delicious salad. I first saw this prepared at a raw foods class given by Dr. Ariel Policano and have been enjoying it ever since.
A small portion of the salad is a great side, but it is also filling enough to serve as a stand-alone meal.

I've made this a few times and love it. Easy to make variations, too! Today I added rainbow kale, lettuce, red bell pepper instead of tomato (none ripe yet), cucumber, shredded zucchini, and hemp seed for an awesome dinner salad.

Avocado Kale Salad
http://www.therawtarian.com/community/recipe/avocado-kale-salad#60
This was pretty good, and fun to play with my food! It lacked depth, though, so I threw in a handful of raisins and some red onions which helped it alot. Good base recipe to play with to suit your own palate, as above, with red bells, mushrooms, etc.

Had this tonight. Hubby (non-RAW) and son (90% RAW) absolutely loved it. I (high RAW) only liked it. Should have added more lemon juice. Did add sweet corn cut off the cob, extra tomato, and chives. I think it will grow on me

I loved this! Thanks jsorensens2 for the tip on the 10 min. massage I have tried to make this type of salad before and didn't like it because the the toughness of the kale but after massaging for 10 min it is almost like creamed spinach consistency. yum

Well this was my first experience with Kale (other than a salad I bought at a health food store which was 'eh'). I loved it so I made another batch right on the spot. The first batch I did exactly as the recipe said (except the hubby loves pine nuts so I added some of those). The second batch was a little different (I'm still learning so if any of this isn't raw SORRY!) I did the base recipe but replaced cayenne with a fresh Thai Chili Pepper minced up nicely, and garlic and sesame seeds. It was excellent! I will be taking it to work tomorrow for lunch! Thanks!!

Massage the kale for a long time - 10 minutes - to break down the fibers and make it nice and soft. I massage it for 5 minutes with just the olive oil, then add the avocado and massage that in for the last 5 minutes, then top with my favorite veggies: tomatoes, marinated mushrooms, chopped red onion, etc. It tastes really good and will fill you up! Also it keeps in the frig for a couple of days I have found out. Skip the cayenne completely if you don't like heat - it doesn't need it, but for spice lovers throw it in.

Well this looks delicious.
As close to a raw food contest as the mainstream media will probably ever get - but you should check it out:

Just thought I'd share and encourage raw folks to represent :)
