Good sized salad for 2
Ingredients
1 bunch dandelion greens, chopped
8 ripe peaches, remove pits and slice
2 stalks celery, sliced thin
2 pint grape or cherry tomatoes, sliced in half
Recipe Directions
Measure 2 ounces of celery and 8 ounces of peaches and blend smooth. This is the dressing. Toss with all the rest of the ingredients and serve.

By AKAAuburnEyesA simple blend of peach and celery (thanks to Dr. Doug Graham) makes a sweet/tart dressing for this salad with sliced peaches, tomatoes and celery with dandelion greens. It was very pretty (but consumed too quickly for a photo … next time I will add one). Very minimalist but tasty.
