Ingredients
1 cup dried apricots (soaked overnight; save soak water)
2 bananas
8 dates (soaked for 20 minutes or so; Medjool are sweetest)
1 teaspoon vanilla extract (not raw/may use seeds from pod)
¼ cup almond butter
Recipe Directions
1. Put all ingredients in 1 food processor until smooth. If you have a Vitamix or other high speed blender, it will come out much more like a pudding texture.
2. Add some of the soaked apricot water to smooth to the right consistency.
3. Refrigerate until cold and enjoy.

My son hates butterscotch pudding, but my sister absolutely loved it.
I found dried apricots at Whole Foods.

oo, I love butterscotch pudding. I don't like apricots though. How apricot-y does this taste?

I'm not an apricot eater myself, but it it kinda blends in with the rest of the ingredients so it's not that noticable. Hope you like it.

Funny enough I'm the exact opposite of the other posters--I love apricots but I hate dates. I hope the date taste isn't too strong.
