This marinated eggplant makes an excellent side dish.

Ingredients
2 large or 4 small eggplants (dehydrated)
1 head garlic
¾ cup sun-dried tomatoes
½ cup olive oil or grapeseed oil
2 red bell peppers
1 tablespoon sea salt
Recipe Directions
1. Dehydrate the eggplants for 6 to 8 hours. After dehydrating, soak them in a mix of olive oil, fresh lemon juice, and pressed garlic for 4 hours.
2. Put all the ingredients in a food process or Vitamix or other blender and process/blend until you like the look of it. If too thick, add water.

Thanks, d&z. I live in Windsor, which is 3.5 hours' drive from Toronto. I grew up there and my family is there, so I'm in Toronto at least once a month. Maybe other GTA-ers (and beyond) will notice this and we can do a raw meetup sometime. :-D

Bronwyn, it's the entire bulb. You buy a head of garlic, then break off the individual cloves.

hey chudesno stava tuk. I na balgarski si govorim daje. Gledah v tazi stranica maj njama vazmojnost za pisane na lichni saobshtenija do potrebiteli, taka li e? Shte trjabva da otvorim tema na balgarski - ha-ha. Predi dva dni mi dojde excalibur-a i oshte ne sam go polzvala - imate li recepta, kojato ste izprobvali za soleni krakeri - neshto kato hljab?

Nie sme semeistvo az se kazvam Dinko saprugata mi e Zlatina a beboka na snimkata e Maya :) Mnogo shte se radvam da obmeniamae info.Bi bilo 4udesno

da, kazvam se Gergana i jiveja v Sofia, bi bilo hubavo da obmenjame opit. I az imam 10 mesechen sin, kojto se opitvam da hranja s raw foods.

yes, we eat it here in Bulgaria but I think the recipe is Turkish originally. I have eaten it in the non-raw option but I have to make it and try the raw one. It's yammy really

Is this recipe Bulgarian, BTW? I ate spectacular food in Bulgaria in 2006. I've seen other non-raw recipes for this dish, but there were peppers and also parsley in them. Have you tried this?

i peel it but not every time.Peeled i think is better but we are raw so we are trying to get every single vitamin ;) it is up to you.
