Yield
Approximately 10-12 cookies
Ingredients
2 bananas
Juice of 2 lemons
Vanilla extract (as desired)
1 1/2 cups coconut (dried)
2 pinches of sea salt
1 tablespoon maple syrup or agave nectar
Recipe Directions
1. Put everything, except the dried coconut, into the food processor. Process until thoroughly smooth.
2. In a separate bowl, add the “batter” and the dried coconut. Stir together until mixed.
3. The size of each swirl should be about 1 tablespoon. After the swirls have been made, mash down with a fork and add one raisin in the center of each one.
4. Put on Teflex sheet in the dehydrator for 12 hours. Then turn over and let dehydrate for 3 more hours.

By meshuganahrachI know that these are really similar to the other lemon cookies, but these contain no nuts and have half the amount of fat.
Easy to digest, if having difficulty with nuts and seeds!
Should be moist on the inside and crunchy on the outside. Enjoy!

This is a great idea. You should submit more recipes like this because I am in the same situation. I want to go more raw but have issues digesting fat, and I think I might be allergic to tomatoes.

I tried these today and they are so delicious! Definitely the best raw cookie recipe I have tasted! I really enjoy the banana flavor.

I really want to make these but only have cappucino flavored agave nectar. i'm out of the regular stuff. i think i'll just try it like that anyways. i have no other sweeteners in the house!!!

i have a batch of these in the dehydrator right now -i will let you know how they turned out. i have them on 105 degrees only so it will take longer.

usually around 125 degrees until soft and pliable....you can set it to a lower temperature and dehydrate longer.
