Ingredients
1 apple
2 celery stalks
1 cucumber
1 avocado
10 baby carrots
a grip of cilantro
handful of dried cranberries
handful of chopped, dried apricots
Recipe Directions
Chop apple, celery, cucumber & avocado into bite sized chunks.
Pulse carrots & cilantro in food processor until minced.
Chop apricots into little bits.
Stir all ingredients together.
Enjoy!

Will this last (say, in a lunch box). I am thinking that the avocado would turn. The picture is beautiful and I love, love, love waldorf salad.

Yes! Finally! A salad that is exciting and tasty without a complicated, oily dressing. I love the addition of cranberries and apricots - sheer genius! yummy!
