Recipe Directions

  • 1. Process almonds, dates and water. (You don't need them to be totally processed, just process well enough--similar to how you'd process to make a raw pie crust.) You should see smallish chunks of dates and almonds.
  • 2. Transfer almond/date/water mixture into a big mixing bowl.
  • 3. Add everything else to the big mixing bowl and just mix with a spoon or even your hands.
  • 4. Spread granola bars into two glass dishes. (This is a big recipe, so you'll probably want to put it into two separate dishes or else it'll be really thick in one dish.)
  • 5. These raw granola bars can be eaten as is--undehydrated (taste more like brownies then) or you can cut and dehydrate these raw granola bars to make a more traditional crunchy granola bar. Perhaps leave one dish moist and dehydrate the other! Best of both worlds :)

The Rawtarian's Thoughts

By The Rawtarian

Raw granola bars are so tasty. I should really make them more often!

Sorry for posting a raw granola bar recipe that calls for so many ingredients, I realize that it goes against my "totally simple" rule... But I just made this recipe up and the flavor is so nice so I wanted to share these raw granola bars with you all!

Plus, it is actually pretty easy once you get past the first food processing bit.

This raw granola bar recipe would actually make a perfect pie crust or raw cake base as well. It's got the standard raw goody texture. :) But the flavor is really unique--in a good way!

Hi. This recipe is awesome. It's great. Thanks for sharing. I just made a batch, which is actually still in the dehydrator. my husband and myself just tasted it and it's yummmmm. I made some variations. I added cashews and walnut meal to it and instead of buckwheat I added quinoa flakes. It is just so yumm. I am going to make it again. I also did not have the exact qty. of ingredients mentioned, so I just thew in whatever I could, but it still turned out great. Thanks again. God bless you.

This recipe is very forgiving. I think as long as you have the tahini and the sweet stuff (dates), then you can susbtitute a lot of the nuts/dried fruits IN THE SAME QUANTITIES (ie. same amount of dried fruit, same amount of nuts) and it'll be good.

Thank you for sharing your tweaks and substitutions. Your comments help make this site a better resource for all. Glad to have you here Laura.

This recipe looks delicious! I just need to get a couple things at the store. Can you find Tahini anywhere? I did a quick Google search and it appears that Trader Joe's has it. Would it be labeled Tahini Sauce? Thanks for your help!

Tahini is usually pretty easy to find - in the health food store or health food aisle near almond butter, etc. It's not really a "sauce". It's just... tahini :)

Hi! Do these need to be refrigerated, raw or dehydrated? If not, how long will they keep at room temperature? I want to send some goodies to my brother for his birthday :)

Room temperature is not good for these. Try fridge or dehydrating.

these were delicious and easy! I omitted the seeds as I had none. Organic sunflower seeds are sitting on my counter and I'm ready for another batch. They will be even better!

Sorry. I misread the recipe. I still don't think the buckwheat, not wheat berries, are safe for my daughter with her wheat allergy. Any suggestions?

I am gluten-free and know for a fact that buckwheat is a wheat free/ gluten-free grain. Don't let the word "wheat" scare or fool you. :)

@Lisa...I researched for you...Buckwheat is commonly used in Raw diets because it is not wheat(gluten-free)..no relation to wheat but can be ground into a flour and used like wheat. It is the seed of a flowering plant. So, hopefully you can make this recipe...because it really is a great one with lots of possibilities. Hope this helps ;D

Love these bars...easier to make than the cooked variety and so much healthier. This recipe is great!...I can sub so many ingredients or add with no ill consequences. Turned these into Super Protein bars by adding in Raw Protein and Maca...also made chocolate version with raw cacao powder and cacao nibs...my almost raw hubbie loves these for his workouts. They have great mouth feel, the soft chewiness and the crunch of the nuts and groats and nibs...gonna try Goji powder and Spirulina next time. Thank you sooo much!!!

Can I sub whole grain rolled oats instead for buckwheat groats? And how long to dehydrate the raw granola bars? I'm experimenting today for the first time with my Excalibur. I've made 6 trays of various flax crackers. Tomorrow is the taste test:) Crossing my fingers.

Not sure about the whole grain oats - I've never used them before.

If you try please let me know about results. TY

Hello Australia!! *waves*

Have fun showing off. These ones have a really nice flavor. I think it has a lot to do with the tahini

Just made these! They turned out super deelish (: I have some in the oven set at the lowest temp, some in the dehydrator, and some in the refrigerator. I wanted to see how they all turned out! lol I am new with the whole dehydrator thing (; When using the oven is 150 going to kill all the good stuff?? Should I try to just stick with the dehydrator? Thanks!!

Yes, try to stick with D -especially since you have one!

Yes, the idea is that cooking over 105 degrees diminishes nutritional content

I am curious to know how they will turn out though in oven!
