Ingredients
- 2 cups dried, shredded coconut
- 1/2 cup tahini (sesame seed butter)
- 1/2 cup maple syrup (or agave nectar or honey)
- 1/2 cup coconut oil (liquid)
- 1 teaspoon pure vanilla extract (or 1 vanilla bean)
- 1/2 teaspoon celtic sea salt
Recipe Directions
- 1. Add all ingredients into large bowl except the shredded coconut.
- 2. Stir with spoon until well mixed.
- 3. Once combined, add shredded coconut. Stir again until well combined.
- 4. Drop cookies onto a cookie sheet. Cover and freeze for at least 30 minutes. (Cookies will harden when cooled.)
- 5. Store leftover raw vanilla drop cookies in freezer.

No equipment required! Which means less dishes to clean, which is always a good thing!
Best served cold, straight-out of the freezer because coconut oil will liquify again once warm.
This recipe makes approximately 15 drop cookies. These are super sweet and rich, so just one after dinner does a lot to satisfy that sugar fix!
Please note: the tahini is definitely the secret ingredient in this recipe. So do not try to substitute it with anything. (And do NOT use sesame seeds instead of real oily/liquidy tahini! The texture will be all screwy and not good if you do that. For realz!)

It was probably the easiest recipe I've ever tried. I was a bit skeptical about mixing tahini and coconut oil together - little did I know how heavenly the combination would turn out to be, my daughter and I are raving! You have two new fans :)

Hi Regina, OMG tahini + sweetener = heaven! Especially with a little pinch of salt and maybe a splash of vanilla. I could eat with a tiny spoon and be in heaven too. Glad to welcome you to the fold!

Just made these, so fast so delicious!! Eating one as we speak with a cup of tea.
Next time i would put less agave in them cause for me they are a tiny bit to sweet.

Hi Mese, Thanks for your feedback. I find agave to be a bit sweeter than maple syrup, so when subbing one for the other I try to err slightly on the less is more side when using agave.

Hi Pay, I haven't added the cacao powder myself, but I think adding 3-4 tablespoons would be good. What do you guys think?

They look really nice! I just have a concern about coconut oil though. I don't think there is enough data to back up the claims of how good this is for us. It is high in saturated fat!

There have been many studies backing up the claim that coconut oil is one of the most healthiest fats on the planet. The saturated fat is in the form of MCT and is not stored in the body. Besides, you need good saturated fat and they are not all bad.

I would love to believe it is a super food, but I have read such persuasive arguments supporting that is both good and bad, so really unsure what to take as fact! Anyone can say anything and sound convincing! I just don't know. In the meantime, moderation is the key I guess!

P.S: I am making these cookies today anyway! I left the coconut oil out of the chocolate mousse I made a few weeks ago (made it 3 times and left it out the third time, and it was still perfect!)

I concur. It's awesome, but also something to use sparingly. Not quite like kale in the superfood category :)
