Very good over raw ravoli, raw pasta noodles, sprouted quinoa, marinated mushrooms etc. etc. Lots of possibilities!

Ingredients
1½ cup raw cashews
7 sun dried tomatoes, soaked 1 hour in cold water
1 roma tomato
½ clove of garlic (or more if desired)
¼ cup olive oil
sundried tomato soak water
salt and pepper to taste
Recipe Directions
Put all ingredients into a food processor with some of the tomato soak water. Process until very smooth and creamy, adding more soak water as you go to reach desired consistency.
