1 zucchini (peeled, chopped)
2 tablespoons carob powder
2 to 3 dates
1/4 frozen banana (chunks)
1/4 to 1/3 cup young Thai coconut meat
1 teaspoon vanilla
Pinch of salt
Recipe Directions
1. Place all ingredients in a Vitamix/high powered blender and blend until smooth.
2. This is ready to eat right away but will firm up a little more if you put it in the fridge for an hour or two.

It's great that you've provided a lower fat version here. Zucchini is not something I would have thought of as an ingredient for chocolate pudding. But then again, I use to love chocolate zucchini bread. Thanks for this nut-free variation.
