Ingredients
8 corns, off the cob
1 cup fresh peas deshelled
2 stalks green onions
3 tomatoes, firm and diced- heirloom would be really good with this recipe
1/2 med jalapeno pepper, diced
1 big red bell pepper, diced
1 big greeen bell pepper, diced
1/4 red onion, small dices
1 bunch cilantro, chopped
3 tsp Himalayan salt or to taste
2 tsp black pepper
1 tsp cumin
1/2 large lemon
Recipe Directions
Mix all ingredients in a large bowl and enjoy! It's easy.

By cheflandria2009This is really a simple recipe and similar to a salsa but with corn. It goes well as a wrap or toppings on buckwheat crusts or hemp chips. It's so versatile. I chop up lettuce and have it with steamed Bhutanese rice or quinoa.
