Yield
Serves 2-4
Ingredients
1 Cucumber, Sliced on Mandoline
1 bunch watercress, washed
1 cup sunflowerseeds
1 clove garlic
juice of half a small lemon
1/4 average jalepeno (no seeds)
½ teaspoon salt (I use Himalayan)
½ teaspoon apple cider vinegar
Recipe Directions
Set sliced cucumber and washed watercress aside. Puree remaining ingredients in blender until creamy (I use a magic bullet – it ROCKS!) add filtered water if necessary but it should end up pretty thick. Let sit a bit for flavors to combine.
Spread lightly onto the cucumber diskettes and top with a few leaves of watercress and another cucumber diskette. (watch out! Watercress is SPICY)
Serve with herb tea and a thick British accent! Yum!

Now you can have a proper English Tea! I included the recipe for my favorite spread, it’s a pretty close match, but feel free to experiment with your own.

This sounds so good for a hot day, plus my British husband will probably love it, very creative!
