Ingredients
1 cup raw cashews, sunflower seeds, or almonds
1/2 large red bell pepper (stem, ribs, and seeds removed)
1/4 cup water
2 tablespoons lemon juice
2 tablespoons nutritional yeast
1 tablespoon tahini
1 1/2 teaspoons sea salt
1 clove garlic
2 teaspoons onion powder (or a small slice of onion or 1 tablespoon green onion)
Recipe Directions
1. Blend all ingredients until creamy.
2. Add more water if it is too thick.

I find this sauce is creamiest when I use soaked cashews.
It can be used for pizza, on top of warmed broccoli, in lasagna, etc.

I really love this! My vegan boyfriend desperately misses "hot cheetos" and I promised to figure out a raw version for him. I think this just might be a good place to start! Thanks for the recipe!

I made the recipe with pecans. Brought it to a party that had no interest in raw or healthy eating and put it out without a word. It was the hit of the party and about 10 people asked for the recipe! I will cut the sea salt by 2/3 next time, it's a bit salty for my palate. I'm not 100% raw so this morning I used it as a dip with hard boiled eggs, and as a spread on whole grain toast. Equally great both ways.

I ate this sauce on some warmed broccoli last night and today for lunch I had it on zuchini pasta with lost of pepper! Awsome. I'm making some raw bread tonight I'll have to try it on that. Thanks!!

I made this with a tomato and almond butter instead of a red pepper and tahini and my subs ended up making it gross. Tonight I'm doing it right and following the recipe! Can't wait!

I have just made it....OMG! is so good... I love it and I have to say a big THANK YOU..just eaten half of it on celery sticks and it so go...think you got the picture I'm liking it...but its so good...

I made an account just so I could say how much I love this stuff. I dragged my non-raw, though health-conscious mom in to try it, and she said "Now, I have to doubt that this really tastes like cheddar..." When she had a taste, she looked at me and said "Oh my gosh. It's real!" I had to laugh. Anyway, I am in love with this stuff!

This recipe is great! Even my non-raw son loved it and asked for more...he actually said he could get hooked on this stuff.

What a wonderful cheesy sauce! I like that there isn't oil added to the recipe. I didn't have quite enough bell pepper, so that may have made the salt seem more prominent. I probably was able to produce 1/3 of a large bell pepper, using red and yellow pepper leftover pieces I had chopped from a previous meal. I did find my result to be a bit salty. Then I added half a serrano pepper, a dash of cayenne and an entire scallion bunch to make it a spicy nacho cheese.

This was SO good!!! (my sis also add flax seeds to this, dehydrated it and made crackers) i then used them for croutons in a ceasar salad!

I've been vegan for a few years now and must say that, out of all the raw and cooked "cheddar" sauces that I've tried, this one is my favorite.
Included an extra garlic clove, substituted two jalapenos for the red pepper, added a generous dash of cayenne, and tossed the lot with a bowl of broccoli. Am midway through said bowl as we speak and suspect that I will be very, very sad when it's gone.

I tried this tonight and put it on raw burgers (sunflower) and "mashed potatoes" (cauliflower) and it was sooo good. Thanks for sharing this.

This is SOOOOOO good. It really does taste like cheese. I cut zucchini into little macaroni shapes and I am enjoying some mac and cheese right now.

I made this today and put it over zucchini noodles and OMG! wow, so mo freakin' good! I had to stop myself from eating the whole thing. My sister whos very picky and eats SAD, loved it!

Rich Cheddar Sauce
Awesome. I made mac & cheese and used this recipe for the cheese, and I was pleasantly surprised at how similar it was to the real thing. Wow. I bet I can fool my dairy eating friends. Thanks for the great recipe.

I made this today and I was so excited! It's taste is reminiscent of cheddar cheese. I was really surprised! I really miss cheese so this is going to be a new favorite. I put it on sliced tomatoes and baby carrots. I also experimented and made some zucchini noodles with my saladacco and put the sauce over the noodles to make like a pasta with alfredo sauce. It was quite good. I decided to sprinkle some dried red peppers for a little extra heat. Yum! Next time I will use Jalepeno.

As I made this sauce I blended it on high in the Vitamix for a few extra minutes. This process heated it just a bit. I poured it over my "taco" and Blam!!! Yummie. I had it for three days in a row. This really satisfied my cheese need:-) Thanks so much for this. Next I'll try pouring it over marinated, dehydrated or raw broccoli. That sounds yumie toooo.

I made this sauce last night and dipped broccoli and celery into it and it was heavenly. So easy too! I made it with half cashews and half sunflower seeds. Super yum :)

I just made this sauce and put it over veg pasta with marinated mushrooms and it was so kind of wonderful.
