Ingredients
1 cup raw cashews, sunflower seeds, or almonds
1/2 large red bell pepper (stem, ribs, and seeds removed)
1/4 cup water
2 tablespoons lemon juice
2 tablespoons nutritional yeast
1 tablespoon tahini
1 1/2 teaspoons sea salt
1 clove garlic
2 teaspoons onion powder (or a small slice of onion or 1 tablespoon green onion)
Recipe Directions
1. Blend all ingredients until creamy.
2. Add more water if it is too thick.

I find this sauce is creamiest when I use soaked cashews.
It can be used for pizza, on top of warmed broccoli, in lasagna, etc.

This is almost exactly the recipe I have for cooked vegan cheese sauce. I'm very glad I came across this, ultimate (raw!) nachos are in my future...

I just made this and it is quite delicious! Had to modify it slightly, since I only had Lewis Labs Brewer's Yeast, which I don't think is raw. But I'm transitioning and its what I had on hand, so . . .

i tried this before. tasted just like cheddar! very good. although i added too much bell pepper and came out a little bitter

I am sitting here at work eating my salad and wishing I could just have some cheesy dressing...I am counting down until I can get home and make this! I have some Ani Phyo Sun Burgers left over that are calling out for cheese.

I just made this cheese and it is so delicious! All of my children loved it. They wanted to lick the blender! Then they wanted to just eat it by the spoonfuls out of the bowl. A definate hit! Thanks for posting this.

I made it today and it's really good! I used jalapenos instead of bell pepper and half of the salt. Next time I might add some tumeric for color. It already tastes like cheddar spread, why not make it look like it too! :-)

I just made this and it really does have a cheesy taste..Left out the nutritional yeast though.. Delicious!

rachel- the point of nutritional yeast is for the cultures not to be alive. Because i've read that if the cultures are alive in nutrtional yeast, they will cause intestinal parasites. Actually I remembered this was on brewer's yeast so I'm not sure about the nutritional yeast.

i have heard that unless the nutritional yeast is fortified (not all are) is doesn't have that much B-12 in it.
I tried this tonight and it was great! Looking forward to it for lunch tomorrow.

even though nutritional yeast isn't raw, it's not dead. it has live cultures in it and has vitamin B12, which raw vegans need.

I made this last night and was enamored. This is so yummy and has many different uses. For me the salt amount was a little much so next time I may cut it back some, but otherwise is was divine!

I didn't use the nutritional yeast as it is not raw, so it wasn't cheesy, it came out like a roasted red pepper dip. Remember that stuff? Maybe I put too much red pepper, but it was really gorgeous tasting anyway!

I really love this! My vegan boyfriend desperately misses "hot cheetos" and I promised to figure out a raw version for him. I think this just might be a good place to start! Thanks for the recipe!

I made the recipe with pecans. Brought it to a party that had no interest in raw or healthy eating and put it out without a word. It was the hit of the party and about 10 people asked for the recipe! I will cut the sea salt by 2/3 next time, it's a bit salty for my palate. I'm not 100% raw so this morning I used it as a dip with hard boiled eggs, and as a spread on whole grain toast. Equally great both ways.
