Yield
2 Servings
Ingredients
3 Large tomatoes, just the insides (save the outsides for a stuffed tomato recipe)
½ cup Raisins
1 clove Garlic
4 Carrots, peeled or julienned into "noodles"
Recipe Directions
Core out your 3 tomatoes, and throw the insides into your blender with the garlic and raisins. Blend ‘til smooth. Peel or julienne your carrots into “noodles”, and place in a bowl. Pour sauce on top, and enjoy the sweet, tangy goodness.
Heyenglish's Thoughts
By heyenglishThis dish actually happened by accident. I was making some stuffed tomatoes, so I decided to blend the insides of the tomatoes with some raisins and garlic… and Voila! It tasted like a thick version of that orange duck sauce you get with take out. This is just too easy!

P.S. I would like to make the sauce a tad bit thicker. Thanks again

Nope, I just threw everything into my blendtec and it came out wonderfully smooth. The raisins I have are a little juicy though, and incredibly sticky... but I think you should be fine with just a regular blender too.

I just made this for dinner. Not bad, but I need to experiment a little more with the seasonings. I think this would taste even better if the carrot noodles were warmed in the dehydrator. Thanks for the recipe, the garlic was a nice touch. I will play with the seasonings and see what I come up with.

My sauce came out pretty thick, but I think that depends on how big your tomatoes are, and how much juice and flesh comes out of them. Definitely play around with the seasonings!
I think it would be fun to chop up a bunch of stir-fry veggies and throw those into the sauce, too, for a more complete meal.

Sounds really yummy! Did you soak the raisins?
