Ingredients
TUNA
2 cups almonds
3 stalks raw celery (diced)
3 green onions (thinly sliced)
1 tablespoon parsley (chopped)
3 tablespoons lemon juice
1 clove garlic
1 teaspoon sea salt (finely ground)
2 dashes of cayenne pepper
1/3 cup nori or wakame seaweed (soaked, chopped)
MAYONNAISE
1 cup pine nuts
2 tablespoons apple cider vinegar
4 dates (pitted)
1 clove garlic
1 teaspoon sea salt
1 tablespoon lemon juice
½ teaspoon each dill, thyme, and basil (optional)
1 large avocado
SERVING (OPTIONAL)
Collard leaves
Avocado
Tomato (sliced)
Mesclun greens or sprouts
Raw black olives
Pepper
Recipe Directions
1. Place almonds, parsley, 3 tablespoons lemon juice, 1 clove garlic, 1 teaspoon salt, cayenne pepper and seaweed in a food processor. Process the hell out of it. You can make it chunkier if you want, but chop the garlic first--you don’t want to bite into that!
2. Stir in celery and green onions. Set aside.
3. Place pine nuts, avocado, 1 tablespoon lemon juice, 2 tablespoons apple cider vinegar, 1 teaspoon salt, dates, 1 clove garlic, and spices in the food processor. Blend it like you never blended before. It becomes really smooth and creamy.
4. Mix 1/2 of the mayonnaise with the almond mixture. You can add more if it’s too dry.
5. Take a big collard leaf and spread some of the mayonnaise in the center. Add as much of the "tuna" as you like.
6. Top with sliced avocado, sliced tomato, mesclun greens or sprouts, raw black olives, and freshly cracked pepper. You can sprinkle a little salt on the collard if the mixture isn’t salty enough also.
7. Roll it up, cut it in half, and try not to stuff it all into your face at once!

This is so good if you’re one of those who can’t seem to eat enough.
I make enough of this to have sandwiches for several days because I can’t seem to get tired of eating it!
Wrapping it in collards seems to make it easier to eat (much bigger than romaine and with much less water). You can make giant sandwiches with it!
For an extra delicious tuna salad: I marinated some sun-dried tomatoes for a day in olive oil, apple cider vinegar, and Italian spices, chopped them, and added about 1/4 cup when I mixed my mayonnaise with the tuna. It rocked.

Finally tried it- I usually don't try that many recipes but this one looked so beautiful I had to. Had to make some changed- used brazil nuts instead of almonds because I can't get those raw, and used hemp seeds instead of pine nuts. It was amazing. The avocado mayo tastes just like mayo! I put heaps of it on leaves of baby bok choy and left it in a wrapped up plate for Matt to find when he gets home... This is great!

I am now an official member of the jamestheraw fan club! I just made this tonight and it was deeeeelich! A few things I did differently. I first made the mayo then took half out and then made the tuna in the same bowl w/o washing it. I also used 2 dates, no celery, parsely (not in that fan club), or spices. I added 2 kosher pickles. I made sushi with it. I have put the combo on the sushi thread. Way to go jamethe raw!!!!! More!!! More!!! More!!!

OMG! These are soooooo good! I left out the celery as I've never been a big fan of it. The tuna salad and mayo are both amazingly flavorful. My gosh I'm so glad I have leftovers for dinner tonight! Jamestheraw, thanks a million for this recipe. Please please post more :-)

I was hungry while sitting at the computer and saw your recipe. I had some leftover raw refried beans so I added some nori and garlic and parsley and made the avo mayo and I have to tell you that was sooo satisfying. What a delicious sammie! Next time I'll make it exactly. So good I could eat it every day!

This recipe is delicious. I forgot to put the dates in the mayo and it still turnout out great (I did add a little olive oil to get my processor to turn - it was so thick)! I also put half of the tuna mix (minus the celery, onion and mayo) in the freezer for a quick grab later on, which is really handy.

This is fabulouse, i used to make my mock tuna out of carrots but this one is definitely filling!!!! your recipes have been really good, glad you found this site...

I tried it and it's wonderful. I halved the salt and dates and it's worth every second of preparation. I sliced the tomatoes on the sandwich but next time I may try blending them into the mix. YUMMY.

you know, eden_eve? i adapted it from another mayo recipe (i can't remember where from because i wrote it down ages ago), and the original recipe called for 6 dates! it was good, but i thought it would be much better with fewer dates...i imagine you could use only 1 or 2 if you so desired...;-)
almond eyez- i don't soak the almonds because i'd rather them soak up the liquids they've been blended with so as not to water the taste down...but i suppose it wouldn't hurt to soak them! i think it's always better in terms of digestion to soak nuts. glad to hear it's been well-received! ;-)

I just made this and it's very good! The mayo is a little too sweet, and I didn't have enough seaweed, but it's still great :)

This was incredibly delicious! And yes, enough for days in my fridge waiting :)
Although it took me a lot longer to make it then expected, it was definitely worth.
Partner was impressed too!

thanks! the celery is mixed in the tuna mixture with a spoon. it's in the first paragraph under 'preparation'.
